  • 2 large eggs
  • ½ cup gluten-free rolled oats
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp gluten-free Worcestershire sauce
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning (gluten-free)
  • For the glaze:
  • ½ cup gluten-free ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×5 loaf pan or line a baking tray with parchment paper.
  2. In a large bowl, combine all meatloaf ingredients. Mix gently until just combined—do not overmix.
  3. Shape into a loaf in the prepared pan or tray. Smooth the top.
  4. In a separate bowl, whisk together glaze ingredients and spread half over the meatloaf.
  5. Bake uncovered for 45–50 minutes.
  6. In the last 10 minutes of baking, brush the remaining glaze on top.
  7. Let rest for 10 minutes before slicing. Serve warm.
