A gluten-free take on Costco’s classic meatloaf—savory, juicy, and topped with a sweet tomato glaze. Perfect for Celiacs or anyone avoiding wheat.
Ingredients

- 2 lbs ground beef (80/20)
- 2 large eggs
- ½ cup gluten-free rolled oats
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tbsp gluten-free Worcestershire sauce
- 1 ½ tsp salt
- 1 tsp black pepper
- 1 tsp Italian seasoning (gluten-free)
- For the glaze:
- ½ cup gluten-free ketchup
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×5 loaf pan or line a baking tray with parchment paper.
- In a large bowl, combine all meatloaf ingredients. Mix gently until just combined—do not overmix.
- Shape into a loaf in the prepared pan or tray. Smooth the top.
- In a separate bowl, whisk together glaze ingredients and spread half over the meatloaf.
- Bake uncovered for 45–50 minutes.
- In the last 10 minutes of baking, brush the remaining glaze on top.
- Let rest for 10 minutes before slicing. Serve warm.
Notes
Double the batch and freeze one loaf for easy meal prep. Serve with gluten-free mashed potatoes or a light side salad.
